Paleo Cabbage Rolls AIP



These Paleo Cabbage Rolls are AIP-friendly and filled with seasoned ground beef and cauliflower rice, making them a delicious and comforting meal.

Ingredients:

  • 1 large cabbage head
  • 1 pound ground beef
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tablespoon coconut oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper omit for AIP
  • 1 cup cauliflower rice
  • 1 cup bone broth or AIP-friendly broth
  • 1 tablespoon apple cider vinegar

Instructions:

Preheat the oven to 350F 175C

Bring a large pot of water to a boil

Carefully remove the core from the cabbage head and place it in the boiling water

Cook for about 5-7 minutes, or until the outer leaves are soft and pliable

Remove from water and let it cool

In a skillet over medium heat, saut the chopped onion and garlic in coconut oil until softened

Add the ground beef to the skillet and cook until browned

Stir in the dried oregano, dried thyme, salt, and pepper if using

Stir in the cauliflower rice and bone broth

Let simmer for 5-7 minutes, or until the cauliflower rice is tender and the mixture thickens slightly

Stir in the apple cider vinegar

Carefully separate the cabbage leaves from the head

Place a spoonful of the ground beef mixture onto each cabbage leaf and roll it up, tucking in the sides as you go

Place the cabbage rolls seam side down in a baking dish

Bake in the preheated oven for 25-30 minutes, or until the cabbage is tender and the filling is cooked through

Serve hot and enjoy!
