This Lentil Quinoa Bolognese is a hearty vegan take on traditional Bolognese sauce. It's full of protein and flavor, so both vegans and non-vegans will enjoy it.
Ingredients:
- 1 cup lentils, cooked
- 1 cup quinoa, cooked
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, grated
- 1 bell pepper, diced
- 2 cups tomato sauce
- 1 tablespoon tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- Salt and pepper, to taste
- 2 tablespoons olive oil
Instructions:
Warm up a big pan with olive oil over medium-low heat
Add the minced garlic and chopped onion and saut until the garlic smells good
To make it soft, add grated carrot and diced bell pepper and mix them in
Mix the cooked lentils and quinoa well in the pan
Add the tomato sauce and tomato paste and mix them together
Add salt, pepper, dried oregano, basil, and thyme to taste
Let the mixture simmer for 10 to 15 minutes, stirring every now and then
Pour hot sauce over cooked spaghetti or squash
