Spinach and Chicken Quesadilla



Enjoy a delicious and low-carb Spinach and Chicken Quesadilla packed with protein and veggies. Perfect for a quick and healthy meal!

Ingredients:

  • 2 low carb tortillas
  • 1 cup cooked chicken breast, shredded
  • 1 cup fresh spinach leaves
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1/4 cup diced bell pepper
  • 1/4 cup sour cream
  • 1/4 cup salsa
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions:

Put the olive oil in a nonstick skillet and heat it over medium-low heat

In a skillet, put one tortilla in the pan and sprinkle half of the shredded cheddar cheese over it

On top of the cheese, put the cooked chicken, spinach leaves, tomatoes, red onion, and bell pepper that have been diced

Add pepper and salt to taste

To make the second tortilla, put it on top and quickly press it down

As soon as the cheese melts and the tortillas turn golden brown, flip them over and cook for another two to three minutes

Take it out of the pan and let it cool for one minute

It goes well with sour cream and salsa, which you can get on the side
